Turn Your Carrots into Bacon

Kent Brewster has devised an ingenious method for tranforming useless, nutritious fresh-grown carrots into crispy, vitamin-free bacon. And his method uses canola oil instead of animal oils, so vegans can partake. It’s simple:

Gather up some big ol’ carrots, peel them and toss the skins, which you’ll then deep fry in canola oil for a minute and a half at 375 degrees. Brewster writes that this should “remove any vitamins, minerals, and/or lingering taste of carrot.” Thereafter, dab them with paper towels and sprinkle on some truffle salt, and: Carrot bacon.
